Excessive iron unused by the body that is stored in the organs like the pancreas, liver, and heart can lead to life-threatening conditions such as diabetes, heart problems, and liver disease.

Hemochromatosis is caused by a gene mutation. This can be passed from parents to children. It can be treated by continuous blood removal and contains excessive iron from the body and refilling the body with fresh blood.

Hemochromatosis diet plan: White meat turkey moussaka

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 cups white turkey meat
  • Salt to taste
  • Freshly ground black pepper
  • 1 tsp ground cinnamon
  • 2 bay leaves
  • 1 tsp dried basil
  • ½ tsp of crushed red pepper flakes
  • ½ tsp freshly grated nutmeg
  • ½ tsp ground ginger
  • ¼ tsp ground allspice
  • 1 can of crushed tomatoes
  • 1 tbsp balsamic vinegar
  • 6 tbsp unsalted butter
  • ½ cup all-purpose flour
  • 3 cups of milk
  • 3 eggs yolks, lightly beaten
  • 1 cup yogurt
  • 2 eggplants, peeled and sliced
  • 3 Potatoes, thinly sliced
  • 1 cup grated cheese

Method

  • Heat the olive oil in a large skillet over medium-high heat until sizzling hot.
  • Add the onion and reduce the heat to medium and cook, stirring, until the onion is soft about 5 minutes. before
  • Add the garlic and continue to cook, stirring, for 1 minute more.
  • Add the turkey and season with salt and black pepper to taste, stirring to break up the meat as it cooks.
  • Add the cinnamon, bay leaves, basil, red pepper flakes, half the nutmeg, ginger, and allspices and cook, stirring, until the turkey is cooked through, about 5 minutes.
  • Add the tomatoes and vinegar and stir to combine. Reduce the heat to low and simmer for about 30 minutes until slightly thick. Remove from the heat and set aside.
  • While the meat sauce is simmering, make the béchamel sauce: melt the butter in a saucepan over medium heat, whisk in the flour and cook until it is pale in color, about 2 minutes.
  • Add the milk in a slow, steady stream, whisking constantly, until all is incorporated.
  • Bring to a low boil, reduce the heat to low, and cook, whisking often, until thick and slightly reduced about 10 minutes.
  • Season with salt and black pepper.
  • Remove from the heat and let cool slightly.
  • In a small bowl whisk together the egg yolk and yogurt.
  • Whisk this into the milk mixture until smooth, and set the béchamel sauce aside.
  • Heat just enough canola oil in a large skillet to cover the bottom of the pan about ⅛ inch deep over medium-high heat until sizzling hot.
  • Working in batches, cook the eggplant until golden brown on both sides, about 2 minutes per side, adding more oil as needed.
  • Transfer to a paper towel to drain.
  • Add the potatoes to the same skillet, working in batches, and cook, just until tender but not cooked through, about 2 minutes per side.
  • Remove from the skillet and drain on a paper towel.
  • Preheat the oven to 350°F.
  • Layer the ingredients as follows: spread 1 cup of the béchamel sauce on the bottom of a 9 x 13 x 2-inch baking dish.
  • Sprinkle half of the cheese. Spread the cooked potatoes over the cheese and top with half of the eggplant slices.
  • Pour the meat sauce over the eggplant and top with the remaining eggplant and the bechamel sauce.
  • Cover with foil for about 30 minutes.
  • Remove the foil and continue to bake for 15 more minutes until it turns golden brown and bubbles around the edges.
  • Remove from the oven and let sit about 30 minutes before serving. Serve warm.

  • 1 cup cooked basmati rice

Method

  • In a large saute pan over medium heat, combine the cooked rice and milk.
  • Heat until the mixture begins to boil.
  • Decrease the heat to low and cook at a simmer until the mixture begins to thicken, stirring frequently, for approximately 5 minutes.
  • Increase the heat to medium, add the heavy cream, coconut milk, powdered palm sugar, and cardamom and continue to cook for 5-10 minutes until the mixture begins to thicken again.
  • Whisk the mixture to prevent the formation of lumps while adding cardamom powder.
  • Once the mixture just begins to thicken, remove it from the heat.
  • Transfer the mixture to individual serving dishes or a glass bowl and place plastic wrap directly on the surface of the pudding.
  • Serve chilled or at room temperature.

Split pea and Mint Soup Ingredients

  • ⅓ cup dried green split peas
  • 3½ cups of water
  • 1 tbsp olive oil
  • 2 medium onions, chopped
  • 3 cloves garlic minced
  • 5 cups vegetable stock
  • ½ teaspoon salt plus more as needed
  • ¼ teaspoon black pepper plus more as needed
  • 2 green tea bags
  • 2 cups of fresh or frozen green peas
  • 10 to 20 fresh mint leaves
  • Milk or cream to taste

Method

  • Put the split peas and 3½ cups of water in a large pot over high heat.
  • Allow the split peas to a boil on a medium flame for 15 minutes and simmer uncovered for 15 to 20 minutes, until the split peas are soft and well-cooked and most of the water is absorbed.
  • Transfer the cooked split peas from the pot into a small bowl.
  • Place the same pot on medium heat, add oil, onions, and an additional 1 to 2 tbsp of water.
  • Cook the onions for 5 minutes, then add the garlic and cook for 2 additional minutes, stirring frequently.
  • Add the split peas, vegetable stock, salt, and pepper, and bring the mixture to a boil over high heat.
  • Reduce the heat to medium, add the green tea bags, stir, and simmer, uncovered for 5 minutes.
  • Add the green peas and mint, and simmer the soup for 10-12 minutes.
  • Remove the pot from the heat, remove and discard the green tea bags, and let the soup cool for 10 minutes.
  • Puree the soup using a blender or immersion blender.
  • Season the soup with additional salt, pepper, and fresh mint to taste. Add the milk to make a creamy soup.
  • Serve the soup garnished with an additional mint leaf.
