Liver Cirrhosis is a serious condition that occurs when the liver is permanently damaged. The healthy tissues are replaced by scar tissues. It is a non-treatable disease.

- 1 large onion chopped
- 1 green bell pepper chopped
- 1 rib celery chopped
- 3 cloves garlic minced
- 2 cups dried black-eyed peas
- 5 cups of water
- 3 diced tomatoes
- 1 tbsp hot sauce
- 1 tsp dried oregano
- 1 tsp salt
- ½ tsp black pepper
- ⅛ tsp cayenne pepper
- Cooked rice to serve
Method
- Heat a large pressure cooker over high heat. Add the onion and sauté until it turns translucent.
- Add the bell pepper, celery, and garlic to the onions and cook for another 2 minutes. Add some water if necessary to avoid the vegetables from sticking to the bottom of the pan.
- Add the black-eyed peas and water, stir well, scraping the bottom to remove any burned bits, seal the cooker, and bring to high pressure. Cook at high pressure for 6-7 whistles.
- Remove from heat and allow pressure to come down naturally.
- Once the pressure is down, add all remaining ingredients. Return to the heat and simmer for 15-30 minutes, until peas are completely soft and thickened, and cook it for 5 minutes.
- Serve hot over rice with more hot sauce on the table.
To make without a pressure cooker:
- Soak the peas overnight in cold water and drain the excess water.
- Follow the directions for sautéing the vegetables. Then add all ingredients to the pot and add water to cover the peas by one inch.
- Cook until peas are completely tender, about 1 1/2 to 2 hours, adding more water if necessary.
- When they’re tender cook it for 5mins again and serve over rice.

- 8 strawberries, washed
- 2 kiwi fruits
- 2 bananas
- 1 mango
- 16 grapes, washed
For the chocolate sauce
- 50g dark chocolate
- 25g unsalted butter
- 125ml double cream
- 1 tsp orange zest
- 1 tbsp orange juice
Method
- Start by preparing the fruit, for the strawberries remove the stalk and cut them in half if they are big.
- For the kiwis, peel with a small sharp knife.
- Cut off the top and bottom of the kiwi and cut it into 4 pieces.
- For the banana, peel the bananas and cut them into chunks.
- If you are preparing the banana beforehand you will need to drizzle it with lemon juice or it will oxidize and change color.
- For the mango, stand the mango so the pointed end is facing away from you and the cheeks on either side.
- Slice using a small sharp knife downwards to remove the mango cheeks on either side of the seed. Slit along the length of the cheek with a sharp knife.
- Turn 90 degrees and score along again to make a crisscross pattern. The squares should be bite size.
- Peel off the skin and cut them into cubes large enough to insert them into a skewer.
- Insert the fruit onto wooden kebab skewers, alternating the fruit.
- To make the chocolate sauce, break the chocolate and put it in a glass bowl.
- Set the bowl over a pan of barely simmering water, making sure the base of the bowl doesn’t touch the water.
- Allow the chocolate to melt slowly, stirring occasionally. The melted chocolate should be smooth and glossy.
- Heat all the remaining ingredients in a small saucepan until evenly combined. Do not let the cream boil.
- Remove from the heat and stir through the melted chocolate. Stir until well combined and the sauce is smooth and glossy.
- Pour the chocolate sauce into a small bowl and serve as a dip for the fruity kebabs.

- One 5-pound whole, bone-in turkey breast
Rub:
- 2 tbsp chopped fresh rosemary
- 2 tbsp chopped fresh thyme leaves
- 2 tbsp olive oil
Stuffing:
- 1 small onion, thinly sliced
- 1 apple, peeled and thinly sliced
- 1 pear, peeled and thinly sliced
- ¼ cup dried cranberries
Glaze:
- 2 cups apple juice, divided
- 1 tbsp brown sugar
- 1 tbsp brown mustard
- 1 tbsp olive oil
Method
- Heat the oven to 325 F.
- On a rack in a roasting pan, place the turkey breast, skin-side up.
- In a small bowl, combine the herbs and olive oil to make a paste.
- Loosen the skin from the meat gently with your fingers — making deep pockets between the skin and meat.
- Smear the meat directly with half of the paste. Spread the remaining paste evenly over the top of the skin.
- In another small bowler the sliced onions and fruit. Stuff each pocket with the mixture.
- Pour 1 cup of apple juice into the bottom of the roasting pan.
- Roast the turkey breast for 1 .45 mins to 2 hours, until the turkey is soft and tender and the skin turns golden brown.
- Cover the meat with aluminum foil if charring is noticed.
- In the meantime, make the glaze. Add the remaining cup of apple juice, brown sugar, mustard, and olive oil to a saucepan.
- Allow it to boil, reduce the heat and simmer until it becomes thickened and the volume reduces to about 3/4 cup. Use this paste on the turkey during the last 30 minutes of cooking.
- When the turkey is done, cover it with foil and allow it to rest at room temperature for 15 minutes.
- Carve, serve and spoon any remaining glaze over the turkey.

Red quinoa
- 1/2 cup red quinoa rinsed and leached
- 2 tbsp olive oil
- 1/2 medium Onion, chopped
- 1 large carrot, chopped, leached
- 1 bunch Rainbow chard, chopped
- 2 cloves garlic, crushed
- 1 portobello mushroom, chopped
- 2 tbsp water
- ½ tsp Kosher salt
- Fresh cracked pepper
- 1 stem scallion and seven flavored peppers.
Poached egg
- 2 eggs
- Pepper powder
- Garlic powder
- Water
Method
- Boil all the vegetables and quinoa separately and discard the water.
- Heat olive oil in a large skillet over medium heat. Cook onion, carrot, and chard stem for about 7 minutes until softened.
- Add garlic and mushroom and cook for another 2 minutes.
- Put chard leaves on top of vegetables, add 2 tbsp of salted water and cook covered for about 2 minutes.
- After leaves appear wilted, remove the lid and allow excess liquid to evaporate.
- Once there is no visible liquid in the pan, stir in quinoa and remove from heat. Cover while you poach the eggs. Or if not eating eggs, serve immediately.
- To poach the egg, bring a medium saucepan of water to a simmer and crack the egg into a small bowl or cup.
- Using a spatula, swirl simmering water in a circle, then slowly pour in the egg.
- Cook until white firm and the yolk is done.
- Use a slotted spoon to lift the egg out of the water.
- Place on a plate. repeat with the second egg.
- Once the eggs are ready, serve the quinoa and slide the poached egg on top with a sprinkle of pepper and garlic powder.
- Garnish with scallions and peppers.
