IgA nephropathy’s full form is immunoglobulin A nephropathy. Berger’s disease is a chronic kidney disease that occurs when immunoglobulin A (IgA) deposits start to build up in the kidney. 

A defective version of immunoglobulin A is a long last disease in a person’s life but doesn’t cause serious problems. Some people with severe nephropathy would require the transplantation of a kidney.

Controlling the cholesterol level and blood pressure with some medications is the basic treatment of IgA. It is caused when one IgA is attached to another IgA molecule.

It is associated with other conditions like celiac disease, dermatitis herpetiformis, HIV, liver diseases like Hepatitis B and C, Cirrhosis, and viral infections in the upper respiratory tract.

It is diagnosed by blood pressure test, cholesterol blood test, urinalysis, kidney biopsy, and serum creatinine test.

Veggie Tortilla Wraps Ingredients

  • 4 small tortillas
  • 1 zucchini
  • 2 red bell peppers
  • Low-fat cream cheese spread
  • 1 red onion
  • 1 cup shredded lettuce
  • 1 cup shredded cabbage (white, red, or mixed)
  • sour cream
  • salt, pepper
  • olive oil

Method

  • Peel and thinly slice your red onion. White onion works as well.
  • Wash and cut lettuce and cabbage into shreds.
  • Use red cabbage for color contrast and nutrient diversity. Regular cabbage works as well.
  • Wash zucchini and bell peppers. Cut zucchini into round slices and peppers into strips.
  • Put in a bowl, sprinkle with olive oil, and season with salt and pepper.
  • In a pan, heat a bit of olive oil to medium, then add in the zucchini slices and grill on both sides for a couple of minutes, until softened.
  • Do not crowd the zucchini slices, but make sure each slice fits in the pan. Grill in a few batches if the pan is small.
  • Do the same with bell peppers – these can crowd a bit, so do it in one batch, but make sure to stir them regularly.
  • Remove from the pan when the vegetables have been grilled and turn soft.
  • Place a pan on medium heat and once heated, place a tortilla inside and heat on either side for a minute or two. Repeat with all tortillas.
  • Assemble the wraps. Take a tortilla, spread some low-fat cream cheese on it, and then top it with grilled zucchini slices, bell pepper strips, a bit of red onion, and a handful of shredded lettuce and cabbage each.
  • Top with a small scoop of sour cream, and wrap.
  • If tortillas are small, serve 1-2 per person, if a large one, 1 will be more than enough.

Puffy Chili Relleno Casserole Ingredients

  • 4 cans of whole green chiles, drained
  • 8 flour tortillas
  • 1 cup low-fat cheddar cheese, shredded
  • 3 cups egg substitute
  • ¾ cup fat-free milk
  • ½ tsp garlic powder
  • ½ tsp ground cumin
  • ½ tsp pepper
  • ¼ tsp salt
  • 1 tsp paprika

Method

  • Cut along one side of each chili and open to lie flat.
  • Coat a baking dish with cooking spray.
  • Layer half of the chiles, tortilla strips, and cheddar cheese in the prepared dish. Repeat layers.
  • Mix the egg substitute, milk, garlic powder, cumin, pepper, and salt in a small bowl.
  • Pour over the cheese and tortilla layers. Sprinkle it with paprika.
  • Bake uncovered at 350° for 40-45 minutes or until puffy and insert a knife from the edge of the pan comes out clean.
  • Allow it to stand for 10 minutes before cutting. Serve with salsa.

Braised Tuna Ingredients

  • 2 cups of water
  • 1 tsp extra virgin olive oil
  • 1 medium shallot minced
  • 2 tbsp fresh ginger
  • 2 plums, diced
  • 2 tbsp low-sodium soy sauce
  • 1/2 cup of sake
  • 2 to 4-ounce tuna steaks
  • 1 small carrot, diced
  • ¼ sweet red pepper, diced
  • 8 leaves of cabbage

Method

  • Place the water in a large stock pot fitted with a steamer basket. Set on high heat.
  • Heat the olive oil over medium heat in a skillet.
  • Add the minced shallots and cook slowly until translucent.
  • Add the ginger, plums, soy sauce, and sake and cook for 2 – 3 minutes until the plums begin to soften.
  • As the water in the steamer begins to boil, add the cabbage leaves.
  • Place the tuna in the pan and cook on each side for about 3 minutes.
  • Add the carrots and red pepper. Cook slowly over medium heat for 3 minutes longer, turning the tuna frequently.
  • Remove the cabbage leaves and drain for about 30 seconds on a paper towel.
  • Place on a plate and top with the tuna.
  • Divide the sauce evenly over the top of each plate and serve.

Apple and cherry chutney Ingredients

  • 8 cups apple, chopped
  • 1 ½ cup dried red cherries
  • 2 cups brown sugar
  • 1 cup chopped sweet onion
  • 1 cup chopped red bell pepper
  • 2 tsp ground cardamom
  • 1/4 tsp salt

Method

  • Place a heavy pot on medium heat and put all the ingredients together, and stir it.
  • Bring to a boil and simmer for about 1 hour or until it thickens, stir occasionally.
  • Transfer the hot chutney into clean jars, leaving 1/2-inch headspace.
  • Place filled jars in boiling water for 10 minutes.
  • Remove jars from boiling water and cool on wire racks.
